Beef and Black Bean Tacos with Shredded Cabbage Slaw

So after a 3 month hiatus, I'm back and it's taco night! This is one of the easiest ways to please meat-lovers, and non-meat eaters alike so needless to say, this is a popular meal in our family.

Ingredients

Meat 1 medium beef round chuck 3 tbs teriyaki sauce 3 tbs brown sugar 1 tbs cajun seasoning 1/2 chopped white onion 1 tbs minced garlic 1 cup water 1tbs olive oil


Cabbage Slaw shredded cabbage 1 tbs balsamic vinegar 1 tsp salt 1 tbs sugar pepper 1 tbs olive oil


Garnishes 1 can of black beans flour tortillas sour cream half cup thinly sliced red onions small bunch of cilantro 1 avocado 1 tomato

Directions

Brown onions and garlic in olive oil


Add beef and brown on the outside


Add teriyaki, sugar, water, and cook until bubbly


Remove meat and sauce and place in crock pot. Cook on low for 3-4 hours or until beef falls apart with a fork


Toss cabbage with olive oil, balsamic, sugar, salt, and pepper


Rinse and drain beans


Serve with sliced avocados, red onions, and tomatoes, chopped cilantro, and sour cream

While the boys stuffed their tacos with the tender, fall-off-the-fork beef roast, I filled mine with black beans, avocados, the cabbage slaw, tomatoes, cilantro, and with a touch of sour cream. Everyone was a happy camper!
